Outside the Box

posted:  December 28, 2015

He calls it a grub shack, but what Brian Huskey’s dishing out at his Tackle Box concession on the beach at Corona del Mar is the kind of food you’d find on a lunch menu at a destination restaurant. There’s the poke, laced with a light citrus dressing and layered with texture, with fresh salmon that melts in your mouth, velvety bits of avocado and crunchy rice crisps. His lobster roll (served only on weekends) is brimming with sweet, tender morsels of Maine seafood cradled in custom-made bread blackened by squid ink. And the chowder chicharrón—his New England-style clam chowder, with its bits of bacon, blankets crispy pork rinds like a thick, rich gravy. That’s just a sampling. Does it sound like beach concession food to you?…READ MORE

Top Chef’s Brian Huskey Cooks Up Great Sandwiches at Tackle Box in Corona Del Mar

posted:  December 16, 2015

You might remember Brian Huskey if you watched Top Chef: New Orleans. Me? I stopped watching the show two seasons earlier. So when this very paper broke the news that he was opening a restaurant in OC, it was the first time I’d actually heard of the guy.

Huskey’s place is called Tackle Box, and it’s a stretch to call it a restaurant. The space it occupies is, in fact, a beach concession stand—not much more than a walk-up window near the sand on Corona Del Mar State Beach that you’d mistake for a bait shop if you didn’t know any better. ..READ MORE

Corona del Mar beach grub shack gets upgrade: an actual chef

One of the concessions at the main beach in Corona del Mar recently got a makeover – and a chef.

It’s called Tackle Box. It’s an old building that’s been around forever, but this is probably the first time a real chef has ever stepped into the kitchen.

It’s Brian Huskey, who has worked at Leatherby’s Cafe Rouge in Costa Mesa as well as Picca, Eva, and Fig & Olive in Los Angeles. He appeared on Bravo’s “Top Chef,” Season 11 (New Orleans), a point his charming little brother happily exploits as he engages with customers while he works the cash register…READ MORE
